Radiation in food preservation: A review

Abstract:

Food irradiation is an established preservation technology that uses ionizing radiation to enhance food safety, extend shelf life, and reduce post-harvest losses. This review summarizes the principles of radiation processing, mechanisms of microbial inactivation, effects on food quality, regulatory frameworks, and current applications. Emphasis is placed on the safety assessments conducted by international agencies, technological advantages, public perception, and industry challenges.
